1 small cauliflower head, separated into florets
3 tablespoons of melted unsalted butter
3 tablespoons of extra-virgin olive oil
1/4 cup of breadcrumbs
1/2 cup of grated parmesan cheese
Kosher salt and freshly ground black pepper
2 cups of marinara sauce (I prefer Rao's Homemade Marinara Sauce)
1 cup of shredded mozzarella cheese
Chopped fresh parsley or basil for garnish
1. Preheat the oven to 425°F. In a large bowl, mix the cauliflower florets with the melted butter and olive oil. Add the breadcrumbs and 1/4 cup of parmesan, season with salt and pepper, and toss everything together. Spread the mixture onto a baking sheet and roast until tender and crispy, about 35 minutes.
2. Set the oven to broil. Move the cauliflower to a 3-quart baking dish. Layer with the marinara sauce, mozzarella, and the remaining 1/4 cup of parmesan. Broil until it bubbles,3 to 4 minutes.
